Fried shrimp and Chinese cabbage with soy sauce topcook.tomathouse.com
Ingredients:
- 500 g peeled shrimp medium size
- 1/2 head of cabbage Chinese cabbage (Napa cabbage), cut into 2.5 cm strips.
- 4 green onions, cut into rings, greens cut diagonally
- 1 tbsp finely grated ginger
- 1 clove of garlic, finely grated
- 1 egg white
- 1.5 tbsp cornstarch
- 1.5 tbsp soy sauce
- 1.5 tsp sherry or white wine vinegar
- 1/2 cup unsalted chicken broth or water
- 2 tablespoons of vegetable oil
- Boiled polished rice as a side dish (optional)
Preparation:
- In a large bowl, beat the egg white, 1 tablespoon cornstarch, and 1 teaspoon soy sauce until foamy. Add the shrimp and stir. Refrigerate for 10 minutes.
- Meanwhile, prepare the soy sauce mixture: pour the chicken broth into a small bowl and whisk in the soy sauce, remaining cornstarch, and wine vinegar.
- Dry the shrimp. Fry the white part of the green onion, ginger, and garlic in vegetable oil over medium heat. Add the shrimp and fry for another 3 minutes. Add the Chinese cabbage and stir-fry for another 2 minutes until tender. Pour in the soy sauce mixture, bring to a boil, and simmer for a few minutes.
- Mix fried shrimp and cabbage with green onions. Place on serving plates with rice.
