Ingredients:
- 1/4 head red cabbage, shredded (approx. 5 cups)
- 230 gr. Brussels sprouts, chop (approx. 2.5 cups)
- 1/3 cup chopped chives
- 1 sweet apple, with light orange skin and red spots (Celeste variety), cut into strips
- 1/2 cup kefir
- 3 tbsp white wine vinegar
- 2 teaspoons olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Preparation:
- Prepare the dressing in a salad bowl: Mix kefir with wine vinegar and olive oil.
Add red cabbage, Brussels sprouts, chives, and apples. Season with salt and pepper and toss to combine.
Cover and refrigerate for 1 hour. Season with salt and pepper to taste.
