Bacon-wrapped scallops with mojo rojo sauce topcook.tomathouse.com
Ingredients:
- 700 g large scallops
- 250 g thinly sliced bacon
- 1 tbsp. homemade mayonnaise
- 1/4 cup hot chili paste
- Juice of 1 lime
- 2 tablespoons chopped cilantro, plus extra for garnish
- 2 heads Boston lettuce, leaves washed
- 3 avocados, sliced
Preparation:
- Preheat the deep fryer.
Wrap each scallop with a piece of bacon and secure with a toothpick. Place the bacon-wrapped scallops on a baking sheet, drizzle with olive oil, and season with salt and pepper. Fry them in the air fryer for 10-15 minutes, turning once, until the bacon is cooked through.
- Make a sauce by combining mayonnaise, chili, lime juice, and chopped cilantro. Mix well and chill in the refrigerator until serving.
- To serve, arrange the lettuce leaves on a large platter. Top each leaf with a bacon-wrapped scallop, 2 avocado slices, and a spoonful of dressing. Garnish with cilantro leaves.
