Avocado-Stuffed Eggs with Ham

Ingredients:

  • 6 hard-boiled eggs, cut in half lengthwise and remove the yolks
  • 1/2 avocado
  • 1/4 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1.5 teaspoons of apple cider vinegar
  • 1/2 cup chopped mixed herbs (dill, parsley, basil)
  • 1/2 tsp chopped garlic
  • Salt and freshly ground pepper
  • 3 thin slices of dry-cured ham

Preparation:

  1. In a blender, combine egg yolks, avocado, mayonnaise, Dijon mustard, apple cider vinegar, herbs, garlic, salt, and pepper. Puree until smooth. Fill the egg whites with the mixture.
  2. Fry the ham until crispy and crumble it on top of the eggs.
