Ingredients:
- 1 kg lean ground beef
- 1 tbsp Dijon mustard
- 3 tbsp olive oil, plus a little extra for greasing the grill
- 1 teaspoon chopped thyme leaves
- 3 tsp chopped garlic
- 1 teaspoon coarse salt
- 1 teaspoon ground black pepper
- 200 gr. grated gruyere cheese
- 12 small brioche buns
- 120 g of arugula
- 3 medium tomatoes, thinly sliced
- 2 small red onions, thinly sliced into half rings
- Ketchup, for filing
Preparation:
- Preheat a charcoal or gas grill.
Meanwhile, place the minced meat in a large bowl and add the mustard, olive oil, thyme, garlic, salt, and pepper. Gently mix everything with a fork, being careful not to compact the minced meat. Form into 12 equal patties, 5 cm thick.
Once the grill is hot, brush the grates with oil to prevent the patties from sticking.
- Place the patties on the grill and cook for 4 minutes. Then flip and cook for another 4-6 minutes until medium-rare, or a little longer for well-done. Two minutes before the end of cooking, sprinkle 30 grams of grated cheese on each patty and close the grill lid. Transfer the patties to a serving platter and cover with foil.
- Cut the buns in half and grill, cut side down.
- Spread the young arugula on the 12 bottom bun halves, top with the patties and a slice of tomato and onion. Top each slider with the other bun half and serve with ketchup.
