Ingredients:
Sponge cake
- 0.75 cups premium flour
- 0.5 tsp baking powder
- 0.5 tsp baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 0.25 tsp ground nutmeg
- 0.5 tsp salt
- 3 very large eggs at room temperature
- 1 cup granulated sugar
- 0.75 tbsp. pumpkin puree
- 0.25 cup powdered sugar, plus extra for sprinkling
Filling
- 330 gr. mascarpone cheese
- 1.25 cups sifted powdered sugar
- 2 tbsp. heavy cream
- 0.25 cups chopped dried candied ginger (candied)
- A pinch of coarse salt
Preparation:
- Preheat oven to 190°C. Grease a 30 x 40 cm springform pan with butter, about 2.5 cm high. Line the pan with parchment paper, grease it, and dust the paper with flour.
- In a small bowl, sift together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Mix well. Place the eggs and granulated sugar in the bowl of a stand mixer fitted with the paddle attachment and beat on medium-high speed for 3 minutes, until the mixture thickens slightly.
With the mixer on low speed, add the pumpkin, then slowly pour in the flour mixture until everything is combined. Finish mixing with a rubber spatula. Pour into the prepared pan and spread evenly. Bake for 10-12 minutes, until the pie is firm.
- While the cake is baking, place a clean, thin cloth towel on a flat surface and sift 0.25 cups of powdered sugar over it, spreading it evenly over the entire surface. As soon as you remove the cake from the oven, loosen it from the sides of the pan and invert it directly onto the prepared towel. Remove the parchment paper. Very carefully roll the warm cake and towel together, starting from the short end. Let cool completely on a wire rack.
- Make the fillingIn the bowl of an electric mixer fitted with a paddle attachment, beat the mascarpone, powdered sugar, and cream for about a minute until the mixture is light and fluffy. Stir in the candied ginger and salt.
Carefully unroll the pie on a board, with the towel underneath. Spread the filling evenly over the dough. Roll the pie again. Remove the towel and trim the ends to create smooth edges. Dust with powdered sugar and cut into slices.
