Pasta with shrimp and tomatoes

Ingredients:

  • 450 g peeled medium shrimp
  • 340 g of linguine pasta
  • 680 g ripe tomatoes
  • 5 tbsp olive oil, plus more for drizzling
  • 2 - 3 cloves of garlic, crushed
  • 1/4 cup oregano, finely chopped

Preparation:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and return the pasta to the pot.
  2. Peel the tomatoes and chop them into pieces. In a food processor, combine the tomatoes, 1/4 cup olive oil, garlic, oregano, 3/4 teaspoon salt, and a few pinches of ground pepper. Process until smooth and chunky. Add the sauce to the pasta and toss to combine.
  3. Heat a large skillet over medium-high heat. Season the shrimp with salt and pepper. Add the remaining 1 tablespoon of olive oil to the skillet, then add the shrimp in a single layer. Cook, turning once, until cooked through, 2 to 3 minutes. Add the shrimp to the pasta and toss thoroughly.

    Divide the pasta with shrimp and tomatoes among bowls. Drizzle with olive oil.
