Ingredients:
- 2 lobsters weighing 700 g each.
- 4 hot dog buns with a slit on the top or homemade potato buns
- 1 - 2 tsp chopped tarragon
- 2 finely chopped celery stalks
- 2 lemons, juice one, slice the other for garnish
- 0.25 - 0.5 cups mayonnaise
- Softened butter
- 1 tbsp chopped chives for garnish
Preparation:
- Cook the lobsters in 2 inches of boiling water until bright pink, 8-10 minutes. Immediately plunge into an ice-cold bowl. Remove the tail and claw meat. Slice and set aside.
- Combine the lobster meat, tarragon, celery, and lemon juice in a medium bowl. Add mayonnaise and season with salt and pepper. Spread the outside of the buns with butter and toast until golden brown. Fill each bun with lobster salad and garnish with green onions. Serve immediately with lemon wedges.
