Ingredients:
Marinated grilled beef
- 900 g beef tenderloin, cut into 2 equal pieces
- 1 tbsp fine sea salt
- Freshly ground black pepper
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 2 tsp dried oregano
- 1 tbsp paprika
- 1 tsp chili powder
Sandwiches
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1/2 cup prepared hot horseradish
- 1 teaspoon crushed garlic
- 1/2 tsp fine sea salt
- Freshly ground black pepper
- 16 slices lightly toasted rye bread
- 2 very thinly sliced white onions into half rings
Preparation:
- Place the meat seasonings in a 4-quart heavy-duty plastic bag and shake to combine. Add one piece of meat, shake the bag, remove the meat, and repeat with the second piece of meat.
Place the first piece of meat back in the bag, seal it, and marinate in the refrigerator for a fairly long time—24-48 hours is recommended. But if you don't have time to wait, you can cook it right away. It won't turn out as delicious, but it will still be tasty.
- Prepare horseradish and sour cream sauce: In a medium bowl, combine sour cream, mayonnaise, lemon juice, horseradish, garlic, sea salt, and pepper to taste. Mix thoroughly and refrigerate for at least 4 hours.
- Remove the meat from the refrigerator 20 minutes before grilling and let it come to room temperature. Preheat the grill or a large grill pan to high.
Grill the meat for 10-15 minutes (7.5 minutes per side) or until desired doneness. (Medium is best, approximately 140-145°F (60-63°C). Remove the meat, cover, and let rest for 5-10 minutes.
- Using a knife or slicer, slice the meat as thinly as possible. Divide the meat among 8 slices of bread, top with a little sour cream and horseradish sauce, add a few onion rings, and cover with the remaining bread.
