Ingredients:
- Vegetable oil, for greasing the frying pan
- 1/4 cup hot sauce
- 1 large egg, lightly beaten
- 0.5 kg chicken fillet
- 3/4 cup wheat flour
- 1 teaspoon poultry seasoning
- Table salt and freshly ground black pepper
- 3 tbsp (45 g) unsalted butter
- 2 green onions, plus extra for garnish
- 1.5 cups low-sodium chicken broth
- 4 ready Belgian or Viennese waffles
- Maple syrup, for serving
Preparation:
- Heat 2.5 cm of vegetable oil in a large cast-iron skillet or heavy-bottomed frying pan over high heat. In a medium bowl, combine the hot sauce and egg; stir the chopped chicken into the mixture until completely coated.
- Combine flour, seasoning, salt, and pepper to taste in a medium bowl. Set aside 3 tablespoons of the mixture in a separate bowl; dredge the chicken breasts in the remaining flour mixture until completely coated. Shake off any excess flour.
- Fry the chicken in a hot skillet with oil until cooked through and browned, about 2-3 minutes per side. Transfer the chicken pieces to a wire rack to cool and drain any excess oil.
- Place the butter and remaining flour and seasoning mixture in the same pan. Add the chopped onion and chicken broth. Bring the mixture to a simmer, stirring until smooth. Meanwhile, prepare the waffles.
- Place the waffles separately on plates and pour a little maple syrupPlace the fried chicken on top and pour the sauce over it. Garnish with green onions.
