Fresh celery root salad topcook.tomathouse.com
Ingredients:
- 1 average celery root
- 1 head of frisee lettuce, torn by hand
- 1 large head of radicchio, torn by hand
- Juice of 2 lemons
- Coarse salt
- 1 tbsp Dijon mustard
- 1 teaspoon white wine vinegar
- Freshly ground pepper
- 2 tbsp. heavy cream
- 3 tbsp. extra virgin olive oil
Preparation:
- Fill a bowl with cold water and ice; add half a lemon juice and 1 tablespoon of salt. Wash and peel the celery root, then cut into strips. Add to the lemon water and let sit for 15 minutes. Drain and pat dry with paper towels.
- Add the remaining lemon juice, Dijon mustard, red wine vinegar, 1 teaspoon salt, and 1/4 teaspoon ground pepper to a bowl; whisk in the olive oil, then the cream. Add the celery root and toss to combine; cover and refrigerate for a while.
- Place the frisee and radicchio in a large salad bowl, and toss with the celery and dressing. Serve immediately.
