Meatloaf portions

Ingredients:

  • 1.1 kg ground beef (20% fat)
  • 1 tbsp. l. olive oil
  • 3 cups chopped onion (3 pcs.)
  • 1 teaspoon chopped fresh thyme leaves
  • 2 teaspoons coarse salt
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons Worcestershire sauce
  • 1/3 cup canned chicken broth
  • 1 tbsp tomato paste
  • 0.5 cup plain breadcrumbs
  • 2 large eggs, beaten
  • 0.5 tbsp. ketchup

Preparation:

  1. Preheat oven to 175°C.
  2. Heat the olive oil in a medium skillet. Add the onion, thyme, salt, and black pepper and cook over medium-low heat, stirring occasionally, for 8-10 minutes, until the onion is translucent but not browned. Turn off the heat, stir in the Worcestershire sauce, chicken broth, and tomato paste. Let cool slightly.
  3. In a large bowl, combine ground beef, onion mixture, breadcrumbs Add the eggs and lightly mix with a fork. Don't mash the mixture, otherwise the meatloaf will become dense.
  4. Divide the mixture into 6 portions (280-300 g each) and shape each portion into a small loaf on a baking sheet. Brush each meatloaf with about 1 tablespoon of ketchup. Bake for 40-45 minutes, until the internal temperature of the meat reaches 150°F-160°F. Serve the meatloaf portions hot.
