Diet gingerbread men

Ingredients:

  • 1.5 tbsp. Graham flour
  • 3/4 cup all-purpose flour, plus extra for work
  • 1 teaspoon ground ginger
  • 0.5 tsp ground cinnamon
  • 0.5 tsp salt
  • 1/4 tsp ground allspice
  • 1/4 tsp baking powder
  • 1/4 teaspoon of baking soda
  • 6 tablespoons unsalted butter, room temperature
  • 2/3 cup light brown sugar
  • 1/4 cup honey
  • 1/4 cup water
  • Cooking spray
  • Royal icing, for decoration
  • Gel food coloring (optional)

Preparation:

  1. In a medium bowl, combine the flours, ginger, cinnamon, salt, allspice, baking powder, and baking soda. In a large bowl, beat the butter, brown sugar, and honey with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the water until the mixture is smooth and glossy, 2-3 minutes. Reduce the mixer speed to low and beat in the flour mixture. Divide the dough in half and place on 2 pieces of plastic wrap; form into disks. Wrap and refrigerate until firm, at least 4 hours or preferably overnight.
  2. Position racks in the upper and lower thirds of the oven; preheat oven to 375°F (190°C). Spray 2 baking sheets with cooking spray. Working with one piece of dough at a time, roll it out on a floured work surface to a thickness of 1/4 inch (0.3 cm). Cut out shapes using a 4-inch (10 cm) cookie cutter. Place 1 inch (2.5 cm) apart on the prepared baking sheets; refrigerate for 10 to 20 minutes (if the dough is too soft, refrigerate for an additional 15 minutes). Gather scraps and cut out more shapes; refrigerate.
  3. Bake, rotating the baking sheets halfway through, until the cookies are firm and lightly browned, 10 to 15 minutes. Let cool completely on the baking sheet.
  4. Decorate the cookies with royal icing (tint it with food coloring if desired). Let set for 1 hour.
