Tostados with ground beef and coleslaw topcook.tomathouse.com
Ingredients:
- 2 tablespoons of vegetable oil
- 450 g of ground beef or veal
- 1 large white onion, finely chopped
- Coarse salt and freshly ground pepper
- 1 - 1.5 tsp ground chipotle chili pepper
- 300g canned diced tomatoes with green chili peppers
- 1 lb can red pinto beans, drained
- 1 medium zucchini or yellow squash, diced
- 2 cups salad mix of red and white cabbage, carrots and onions
- Juice of 1 lime
- Sliced lime, for serving
- 8 tostados (flat, crispy corn tortillas) or taco tortillas
- 1.5 tbsp. coarsely grated cheese Cheddar (approximately 120 gr.)
Preparation:
- Heat vegetable oil in a large skillet. Add ground beef, half of the chopped onion, 1 teaspoon salt, and chipotle pepper. Cook, breaking up the meat with a wooden spatula, until the ground beef is browned and the onion is soft, about 7 minutes.
- Add canned tomatoes, beans and zucchini and cook, stirring occasionally, until zucchini is tender, about 6 minutes.
- Meanwhile, mix the salad mixture with lime juice in a bowl, add salt and pepper to taste.
- Place the tortillas on plates, then top with the minced meat. Sprinkle with cheese, salad mixture, and the remaining chopped onion. Serve the tostadas with lime.
