Ingredients:
- 2 ciabatta for sandwiches
- 1/4 cup sugar
- 2 teaspoons pumpkin pie spice mix
- 570 ml strawberries, sliced
- 280 ml blueberries
- 280 ml raspberries
- Juice and zest of 1 lemon
- 4 tbsp (60 g) butter, melted
- 230 g whipped cream
- Fresh mint, for garnish
Preparation:
- Heat grill to medium heat.
- In a small bowl, combine sugar with pumpkin pie spice mixIn a large bowl, combine the berries with half the lemon zest, juice, and half the sugar and spice mixture. Let the berries soak for 15 minutes.
- Cut each ciabatta in half lengthwise, then cut each half at an angle. Brush the cut halves with melted butter and sprinkle with the remaining sugar and spice mixture. Place on the grill. Cook until the sugar is toasted and caramelized (3-4 minutes).
- Combine the remaining lemon zest with the whipped cream and stir. Remove the bread from the grill. Divide it among serving plates. Top each slice with 1/2 cup of the berry mixture. Serve with a dollop of whipped cream and garnish with mint.
