Oven-baked pork ribs with coffee barbecue sauce topcook.tomathouse.com
Ingredients:
Pork
- 2 sections of young pig ribs
- Gray salt
Coffee barbecue sauce
- 10 cloves of garlic
- 4 tbsp. l. olive oil
- 1 cup apple cider vinegar
- 1/2 cup soy sauce
- 2 tbsp. ketchup
- 2 tbsp. honey
- Gray salt
- 2 cups of espresso coffee
Preparation:
- Cut each rib section in half lengthwise along the bone to make stacking easier. Place them on the sheet of paper they were wrapped in to make rubbing easier.
- Preheat oven to 160 ⁰С.
Season generously with salt and pepper on both sides and rub the spices into the meat. Make sure there's enough seasoning, as some will inevitably spill onto the baking sheet. Line the baking sheet with foil and stack the ribs tightly on top of each other, forming a stack about three layers high.
Place in the oven for 2 hours, moving the bottom layer of ribs to the top every 30 minutes, until they are tender and the meat falls off the bones.
- Half an hour before serving, transfer the ribs to a preheated grill (if using coals, ensure they are burned to glowing embers). Brush the ribs with coffee barbecue sauce and close the grill. Continue turning and brushing the ribs with sauce every 10 minutes, about 3 times.
Coffee BBQ Sauce Crush the garlic with the side of a knife, then mash it until it becomes a puree.
Pour olive oil into a preheated saucepan. Add the garlic and sauté for 1 minute, until lightly browned. Add the apple cider vinegar, soy sauce, ketchup, and honey and mix well. Add a pinch of salt, then pour in the coffee. Add ground black pepper to taste. Bring to a boil and simmer for 10 minutes.
Cool and store barbecue sauce in the refrigerator for up to 2 weeks.
