Ingredients:
For mashed potatoes:
- 900 g potatoes, peeled and cut into quarters
- 100 g melted butter
- 1 cup of hot milk
- 4 tablespoons brown butter
- 1/2 cup chopped walnuts
- 2 tbsp chopped fresh rosemary
- 2 tbsp chopped fresh parsley
- 60 g of blue cheese
For brown butter:
- 60 g butter
Preparation:
- Place the potatoes in a saucepan, add cold water until half-covered. Add 1 teaspoon of salt. Cover the saucepan and bring to a boil over high heat. Reduce the heat and simmer until the potatoes are tender. Drain, cover the saucepan with a clean towel, and let it sit for 3 minutes to allow the towel to absorb the steam.
- Add melted butter, hot milk, 1/2 teaspoon salt, and a pinch of sugar to the potatoes and mash until smooth. Drizzle the mashed potatoes with brown butter and sprinkle with walnuts, chopped herbs, and blue cheese.
