Homemade marshmallows

Ingredients:

  • 21 gr. gelatin without additives
  • 1.5 cups granulated sugar
  • 1 cup corn syrup or honey
  • 1/4 tsp coarse salt
  • 1 tbsp vanilla extract
  • Powdered sugar, for dusting

Preparation:

  1. In the bowl of a stand mixer fitted with the beaters, combine the gelatin and 1/2 cup cold water and let it swell while you make the syrup.
  2. Meanwhile, combine the sugar, corn syrup, salt, and 1/2 cup water in a small saucepan and cook over medium heat until the sugar dissolves. Increase the heat and continue cooking until the syrup reaches 115°C (230°F). Remove from heat.
  3. With the mixer running on low speed, slowly pour the sugar syrup into the dissolved gelatin. Turn the mixer to high speed and continue beating until the mixture becomes very thick, about 15 minutes. Add the vanilla and mix thoroughly.
  4. Using a sieve, generously dust a 20 x 30 cm rectangular pan with powdered sugar. Pour the marshmallow mixture into the pan, smooth the surface, and dust with powdered sugar. Let stand, uncovered, overnight until the mixture dries.
  5. Turn the marshmallows out onto a board and cut into squares. Roll in powdered sugar.
