Simple strawberry jam

Ingredients:

  • 1.5 liters of fresh strawberries
  • 3 cups of ultrafine sugar
  • 2 tbsp. orange liqueur (preferably Grand Marnier)
  • 1/2 peeled, cored and chopped
    small cubes of green Granny Smith apples
  • 1/2 cup fresh blueberries

Preparation:

  1. Place the strawberries in a colander and rinse under cold running water. Drain and remove the stems. Cut large berries in half or quarters; leave small ones whole. Place the strawberries in a deep, thick-bottomed pan, such as a Dutch oven, and toss with the sugar and orange liqueur.
  2. Bring the berry mixture to a boil over medium heat, stirring frequently. Add the apples and blueberries and continue to simmer, stirring occasionally, until the jam reaches 105°C (211°F) on a candy thermometer. This should take 25-35 minutes.

    Skim and discard any foam that rises to the surface. Let the mixture cool to room temperature, then store, covered, in the refrigerator. The jam can be stored this way for at least 2 weeks. For longer storage, preserve it in jars according to the package instructions.
    Exit: 1 liter.
