Ingredients:
- 340 g green beans
- 1 shallot, chopped
- 2 tbsp capers
- 1 stalk celery, sliced
- 2 tablespoons freshly squeezed lemon juice
- 1 tbsp Dijon mustard
- 3 tbsp. l. olive oil
- Parsley for sprinkling
Preparation:
- In a large bowl, whisk together the lemon juice, Dijon mustard, and olive oil. Add the shallots. capers, a handful of chopped parsley and sliced celery stalks, a pinch of salt and pepper.
- Boil the green beans, drain, and add to the bowl. Sprinkle with celery leaves.
