Oatmeal and flaxseed cookies with chocolate topcook.tomathouse.com
Ingredients:
- 1.5 cups premium flour
- 1 cup rolled oats
- 1/4 cup flax seeds, finely ground in a coffee grinder
- 1 teaspoon of baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 12 tbsp (180 g) butter, room temperature
- 1 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup chocolate chips
Preparation:
- Preheat oven to 180°C. Line 2 baking sheets with parchment paper.
- In a bowl, mix flour, oats, flax seeds, baking soda, salt and cinnamon.
- In a large bowl, combine the butter, granulated sugar, and brown sugar and beat with a mixer on high speed for 4 minutes. While continuing to beat, add the eggs one at a time, then the vanilla extract. Reduce the speed to low, add the flour mixture, and beat until smooth. Stir in the chocolate chips.
- Place the dough onto the prepared baking sheets, spacing them approximately 5 cm apart, and use a tablespoon to shape the cookies. Place in the oven and bake until golden brown, 10-12 minutes. Remove the oatmeal-flaxseed cookies with chocolate from the oven and let them cool.
