Broccoli cutlets

Ingredients:

  • Cooking spray
  • 1 cup grated broccoli florets
  • 1 cup grated cauliflower florets
  • 2 eggs, beaten
  • 0.5 tbsp. breadcrumbs
  • 1/4 tbsp. grated parmesan
  • 1 tbsp chopped capers, optional

Preparation:

  1. Preheat oven to 350°F (175°C). Spray a baking sheet with cooking spray.
  2. In a large bowl, combine the broccoli, cauliflower, eggs, breadcrumbs, Parmesan cheese, capers, if using, and a pinch of salt and black pepper. Mix everything together with your hands until it forms a sticky paste.
  3. Using your hands, form the mixture into patties about 5 cm in diameter and place them on the prepared baking sheet.
  4. Bake the patties for 15 minutes, then turn them over and bake for another 15 minutes.
