Sticky BBQ Beef Ribs

Ingredients:

    Beef ribs

  • 10 beef short ribs (approximately 12 x 6 cm)
  • 3 and 1/4 cups homemade barbecue sauce
  • 2 cups beef broth
  • 12 crushed garlic cloves
  • 1 onion, cut into 1 cm thick circles.
  • 1 bottle of stout

    Homemade BBQ sauce

  • 3 cups chunky salsa, such as Pace
  • 1/4 cup firmly packed dark brown sugar
  • 2 tbsp. l. ground cumin
  • 2 tbsp. sweet paprika

Preparation:

  1. Preheat oven to 230°C (430°F). Season the beef ribs with salt and pepper and place them on a large baking sheet. Bake until golden brown, about 30 minutes.
  2. Meanwhile, in a large Dutch oven, combine the barbecue sauce, broth, garlic, onion, and beer and bring to a boil. Reduce heat and simmer for about 30 minutes.
  3. Place the seared ribs, meat side down, in a roasting pan. Reduce the oven temperature to 325°F (160°C), cover, and place in the oven. Roast the ribs until tender, 2-2.5 hours.
  4. Preheat grill to medium heat.
  5. Place the ribs on the grill (leaving the sauce in the roasting pan) and cook, turning occasionally, until golden brown, 8-10 minutes. Drizzle with the remaining sauce and serve.

    Homemade BBQ sauce:

    Put it down salsaPlace the sugar, cumin, and paprika in a medium saucepan over medium heat. Bring to a boil and cook until the sugar dissolves, 8-10 minutes.
