Brownie S'mores

Ingredients:

    Cake:

  • 6 tablespoons melted unsalted butter
  • 1.5 cups crispy crumbs graham crackers (whole grain wholemeal cookies)
  • 2 tablespoons of sugar
  • A pinch of fine salt

    Brownie:

  • 8 tbsp (110 g) unsalted butter
  • 110 g chopped dark chocolate
  • 1 tbsp. light brown sugar (compacted)
  • 3/4 cup white sugar
  • 1.5 tsp natural vanilla extract
  • 1/2 tsp fine salt
  • 4 large chilled eggs
  • 1 cup premium wheat flour

    Topping:

  • 4 cups large marshmallows or chewy marshmallows

Preparation:

  1. Position a rack in the lower third of the oven and preheat to 325°F (160°C). Line a 20x20cm square baking pan with foil, extending it by 1 inch (2.5 cm) beyond the edges.
  2. For the cake: Lightly grease foil with a little melted butter. Combine the remaining butter in a medium bowl with the cookie crumbs, sugar, and salt. Spread the mixture evenly over the bottom of the pan and press firmly. Bake until golden brown, about 20 minutes.
  3. Make browniesWhile the crust is baking, place the butter and chocolate in a medium microwave-safe bowl. Melt them in the microwave at 75% power for 2 minutes. Stir and microwave again until completely melted, another 2 minutes. Alternatively, place the butter and chocolate in a heatproof bowl.

    Fill a saucepan with about 2.5 cm of water and bring to a boil. While the mixture is simmering, place a bowl over the saucepan, making sure it doesn't touch the water. Stir constantly until the butter and chocolate have melted. Add the light brown and white sugars, vanilla extract, and salt to the melted chocolate. Add the eggs and whisk vigorously until a thick, glossy batter forms. Add the flour and mix well.
  4. Pour the batter into the prepared pan. Bake for 40-45 minutes, until the top is crisp and a toothpick inserted into the center comes out mostly clean, with a few crumbs remaining.
  5. Remove the brownies from the oven and carefully place them on a wire rack, 6 inches (15 cm) from the broiler element, set to low heat. Top with marshmallows and broil until golden brown (watch carefully, this can happen quickly), about 2 minutes. Cool on the rack, carefully removing the brownies from the pan using foil.
  6. If necessary, carefully peel the marshmallows from the foil and place them back in place. Cut into 12 5cm squares.
