Crispy artichokes in an air fryer

Ingredients:

    Artichokes

  • 2 x 400g jars of canned artichoke hearts, drained
  • 0.5 cups flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 tsp. grated lemon zest
  • 1 teaspoon dried oregano
  • 0.5 tsp coarse salt
  • Olive oil cooking spray

    Dip sauce

  • 1/4 cup mayonnaise
  • 1 small clove of garlic, grated
  • 2 tsp freshly squeezed lemon juice
  • 2 tsp extra-virgin olive oil
  • 1/4 teaspoon coarse salt

Preparation:

  1. Artichokes:

    Preheat the air fryer to 180°C. Pat the artichoke hearts dry. Cut them in half lengthwise. Place the flour in a shallow bowl and lightly beat the eggs in another bowl. In a third bowl, combine the panko, lemon zest, oregano, and coarse salt. Dredge the artichokes in the flour, then dip them in the egg and then roll them in breadcrumbs.
  2. Lightly spray the artichokes with cooking spray and place them in an even layer, sprayed side down, in the air fryer basket. Cook for 7 minutes. Spray with cooking spray, flip, and cook until golden brown, another 7 minutes.
  3. Dip sauce:

    In a small bowl, combine mayonnaise, garlic, lemon juice, olive oil, and salt. Serve with artichokes.
