Ingredients:
- 2 ready Chocolate sponge cake
- 200 g of semi-sweet or milk chocolate
- 1 tbsp cocoa powder
- 2 tsp vanilla extract
- 330 g unsalted butter, room temperature
- 0.5 tsp salt
- 1.5 cups powdered sugar
- 0.5 cup finely chopped chocolate bar
Preparation:
- Prepare the glaze:
Place the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring until melted. Let cool slightly. In a small bowl, combine the cocoa powder and vanilla extract. In a large bowl, beat the butter and salt with a mixer on medium speed until fluffy and smooth, 1 to 2 minutes. Add the melted chocolate and beat until smooth. Gradually add the powdered sugar and beat until fully incorporated. Add the cocoa mixture. Increase the mixer speed to medium-high and beat until the frosting is fluffy and smooth, 1 to 2 minutes.
- Assemble the cake:
Place 1 cake layer on a cake stand or serving plate and spread 1 heaping cup of frosting on top. Sprinkle with finely chopped chocolate bars and top with another cake layer. Spread the remaining frosting over the top and sides of the cake. Refrigerate until completely set, about 30 minutes. Decorate with chocolate bar pieces.
Chocolate bars: Choose milk chocolate with a melting creamy filling with almonds and caramel pieces.
