Red cabbage stewed with cider

Ingredients:

  • Olive oil
  • 1 head of finely chopped red onion
  • 1 peeled, chopped apple
  • 1/2 head of red cabbage, finely shredded
  • 1 cup apple cider
  • 3 tablespoons red wine vinegar
  • 1/2 tsp coarse salt

Preparation:

  1. In a heavy-bottomed saucepan over medium heat, sauté one head of finely chopped red onion and one chopped, peeled apple in olive oil for 5 minutes.

    Add to the pan 1/2 head of thinly shredded red cabbage, 1 cup apple cider, 3 tablespoons red wine vinegar and 1/2 teaspoon coarse salt. Bring the mixture to a boil and simmer for 30 minutes, stirring occasionally, until the cabbage is tender.
