Classic Hot Tuna Sandwiches

Ingredients:

  • 3 large (sandwich size) English muffins, cut in half horizontally
  • 3 tbsp softened butter
  • 2 x 340g cans albacore tuna in its own juice, drained
  • 1 can (340 g) marinated artichokes, drained and chopped
  • 1 cup mayonnaise
  • 0.5 cup pitted Kalamata olives, chopped
  • 1 tbsp. grainy mustard
  • 1 tbsp chopped fresh dill
  • A little hot sauce
  • 3 stalks celery, finely chopped
  • 2 green onions, finely chopped
  • Zest of half a lemon
  • 12 slices Swiss cheese
  • 1 plum tomato, thinly sliced
  • 2 tsp chopped chives

Preparation:

  1. Preheat oven to grill mode.
  2. Grease the halves with butter English muffins, place them in a single layer on a baking sheet and toast in the oven until golden brown, about 2 minutes.
  3. Meanwhile, prepare the tuna salad.:

    In a large bowl, combine the tuna, artichokes, mayonnaise, olives, mustard, dill, hot sauce, celery, green onions, and lemon zest. Season with salt and pepper to taste.
  4. Place a generous dollop of tuna salad on each muffin half, top each with two slices of cheese, and broil until the cheese is melted, about 2 minutes. Remove the sandwiches from the oven and top with tomato slices and chives. Serve.
