Strawberry and Cream Parfait

Ingredients:

  • 450 g frozen strawberries, defrosted
  • 2 tbsp sour cream
  • 1 cup chilled whipping cream
  • 8 meringue 5 cm each, break into pieces (about 2 cups) + 2 meringues, broken in half

Preparation:

  1. In a medium bowl, mash the berries and any juices with a potato masher or fork to create a chunky sauce.
  2. Place the sour cream in a 1-cup measuring cup. Add enough chilled heavy cream to completely fill the cup. Transfer the cream mixture to a deep medium bowl. Beat the mixture with a hand mixer until stiff peaks form. Fold in the meringue pieces.
  3. Divide the sauce in half and spoon it into the bottom of four ramekins or glasses. Divide the cream mixture in half and spoon it over the sauce. Repeat the layers with the remaining ingredients. Top each parfait with half a meringue and serve immediately.
