BLT shrimp sandwich

Ingredients:

  • 16 medium shrimp (about 340 g), peeled and deveined
  • Juice of half a lemon
  • 2 tsp. seasonings Old Bay Old Bay Seasoning
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 2 slices pickled cucumber, sliced ​​+ extra slices for serving
  • 8 strips of bacon
  • 8 slices of potato bread
  • 4 inner leaves of bibb lettuce
  • 2 large tomatoes, sliced ​​into rounds
  • Potato chips, for serving

Preparation:

  1. In a medium bowl, combine shrimp with lemon juice and 1 tsp. Old Bay seasoningsIn a separate small bowl, combine sour cream, mayonnaise, finely chopped pickles, the remaining 1 teaspoon seasoning, and 1/4 teaspoon each salt and black pepper.
  2. In a large skillet over medium heat, cook the bacon until crisp, about 7 minutes. Transfer to a paper towel-lined plate and drain most of the rendered fat, reserving only 1 teaspoon. Return the skillet to medium heat. Add the shrimp, spreading them out in a single layer along with the cooking liquid. Cook, turning halfway through, until pink, 3-4 minutes.
  3. Lightly toast potato bread and spread sour cream mixture on each slice. Layer lettuce, tomatoes, shrimp, pickles, and bacon between two slices of bread. Serve with potato chips.
