Grilled rack of lamb with mint topcook.tomathouse.com
Ingredients:
- 1/3 cup olive oil
- 0.5 cup fresh mint leaves, chopped + extra for serving
- 1/4 tsp red pepper flakes
- 12 small lamb ribs with meat (about 1 kg)
- 2 cloves garlic, crushed
Preparation:
- Preheat the grill to medium-high heat. Combine the olive oil, mint, red pepper flakes, and salt to taste in a bowl. Rub the lamb ribs with garlic. Transfer a few tablespoons of the mint oil to a small bowl and rub the remaining oil over the lamb.
- Grill the rack of lamb until charred, 3 to 4 minutes per side. Press the center of the lamb chop with your finger; it should feel slightly firm and springy for medium-rare. Transfer to a platter and brush with a little of the reserved mint oil. Sprinkle with mint and serve with the remaining oil for dipping.
