Hawaiian Sweet Bread

Ingredients:

  • 0.5 cups of warm milk
  • 3.5 tsp dry yeast
  • 0.5 tsp sugar
  • 1 cup unsweetened condensed milk or low-fat cream
  • 5 tbsp (75 g) butter
  • A large pinch of nutmeg
  • 1 cup of sugar
  • 1 tsp. grated lemon zest
  • 4 cups of bread flour
  • 4 eggs, lightly beaten + 1 beaten egg for brushing the dough
  • 1 teaspoon of salt

Preparation:

  1. Mix milk, yeast, and 0.5 teaspoon of sugar. Let stand until the mixture foams.
  2. Heat the evaporated milk in a saucepan. Add the butter, nutmeg, sugar, and lemon zest. Stir until the butter melts.
  3. Place the flour in a large bowl. Add the eggs, yeast mixture, and salt. Add enough of the milk mixture to form a soft dough. Knead for 15 minutes.
  4. Let the dough rise until it doubles in size. Then punch it down and let it rise again.
  5. Preheat oven to 160°C. Beat the egg with 1 tablespoon of water and brush the surface of the loaf with the mixture.
  6. Bake in a preheated oven for about 50 minutes.
