Guacamole with pears and pistachios

Ingredients:

  • 3 Hass avocados, halved, peeled and diced
  • 2 small ripe firm pears or 1 large pear, cored and finely chopped
  • 2 tbsp chopped cilantro
  • 1.5 tbsp freshly squeezed lime juice
  • 3/4 tsp ground coriander
  • 1 clove garlic, finely chopped
  • 1 small jalapeño, finely chopped (reserve some seeds)
  • 3 tablespoons chopped roasted pistachios
  • Lime wedges for serving
  • Blue corn chips, for serving

Preparation:

  1. Combine the avocado and pears in a medium bowl. Stir in the cilantro, lime juice, coriander, 1/2 teaspoon salt, garlic, and jalapeño. Season with salt and pepper to taste.
  2. Transfer to a serving bowl, sprinkle with pistachios and serve with lime wedges and blue corn chips.
