Mediterranean Spinach Meatballs topcook.tomathouse.com
Ingredients:
- 450 g of ground turkey, 20% fat
- 2 cups frozen spinach (300 g)
- 1/4 cup breadcrumbs
- 2 tsp ground cumin
- 2 cloves garlic, crushed
- 1 medium carrot, grated
- 1 large egg
- 2 tbsp fresh dill, chopped
- 1 cup full-fat Greek yogurt
- Juice of half a lemon
- 3 pocketed pitas, cut in half and warmed
- 2 tbsp. shredded romaine lettuce
- 2 plum tomatoes, chopped
Preparation:
- Preheat oven to 230°C. Line a baking sheet with parchment paper and spray with cooking spray.
- In a large bowl, microwave the spinach according to package directions. Let cool slightly.
- Add ground turkey, breadcrumbs, cumin, garlic, carrots, egg, 1 tablespoon of dill, 0.5 teaspoon of salt, and a pinch of black pepper to the spinach. Mix everything together with your hands. Drop mounds of the meat mixture (about 2 tablespoons each) onto the prepared baking sheet.
- Using damp hands, form the balls and spread them evenly on the baking sheet. Bake until set, 12-14 minutes.
- Meanwhile, in a small bowl, combine the yogurt, lemon juice, and remaining dill. Season with salt and pepper to taste.
- Serve 3 meatballs in each pita pocket. Top with shredded lettuce and sliced tomatoes. Drizzle with yogurt sauce.
