Fried spinach with garlic

Ingredients:

  • 0.7 kg spinach leaves
  • 2 tbsp. l. olive oil
  • 2 tbsp chopped garlic (6 cloves)
  • 2 teaspoons of salt
  • 3/4 tsp ground black pepper
  • 1 tbsp (15 g) butter
  • Lemon
  • Sea salt or coarse salt, optional

Preparation:

  1. Rinse the spinach in cold water until thoroughly clean. Dry it in a salad spinner, leaving just a few drops on the leaves.
  2. Heat olive oil in a large saucepan or Dutch oven and sauté the garlic over medium heat for 1 minute, but don't let it brown. Add the spinach, salt, and pepper to the pan, toss with the garlic and oil, cover, and sauté for 2 minutes.
  3. Then remove the lid, increase the heat, and cook the spinach for another minute, stirring with a wooden spoon, until it's completely wilted. Using a slotted spoon, transfer the spinach to a bowl and top with butter, a drizzle of lemon juice, and a sprinkle of sea salt or coarse salt. Serve the spinach hot.
