Ingredients:
- 0.5 tsp baking powder
- 2.5 cups white rice flour
- 2.5 cups cold sparkling water
- 1 cup frozen deep-fried potatoes
- Rice oil, for deep frying
- 450 g white fish, such as cod, cut into strips
Preparation:
- In a large bowl, combine baking powder, 2 cups of rice flour, and 2 teaspoons of salt. Pour sparkling water into a blender, add the frozen potatoes, and blend until smooth. Pour the liquid mixture into the dry ingredients and mix thoroughly.
- Pour 4 inches of oil into a large saucepan. Dredge the fish in the remaining 1/2 cup of rice flour, then dip in the batter to coat well. Fry the fish in the oil, a few pieces at a time, until golden brown, 6-8 minutes. Transfer to paper towels to drain. Season with salt and serve immediately.
