Ingredients:
- 1 shallot, diced
- Butter
- 1/2 green apple, diced
- 1 teaspoon chopped parsley
- 6 hard-boiled eggs, halved lengthwise
- 2 tablespoons mayonnaise
- 1/2 tsp Dijon mustard
- Salt and freshly ground pepper
- Lemon thyme or mint
Preparation:
- Sauté the shallots in a skillet with butter for 2 minutes. Add the chopped apple and continue cooking for another minute. Stir in the parsley and let cool. Puree the egg yolks, apple mixture, mayonnaise, mustard, salt, and pepper. Fill the egg whites with the paste and sprinkle with lemon thyme or mint.
