Hasselback Potatoes with Garlic and Sour Cream topcook.tomathouse.com
Ingredients:
Accordion potatoes
- 450 g red new potatoes
- 3-5 cloves garlic, thinly sliced
- 4 tbsp (60 g) butter, melted
- 2 tbsp. l. olive oil
Sour cream with herbs
- 0.5 cup sour cream
- 0.5 tsp garlic powder
- 1 tbsp finely chopped parsley leaves
Preparation:
- Preheat oven to 200°C.
- Place each potato in a wooden spoon and make several parallel cuts on the top, using the spoon as a guide to avoid cutting all the way through. Place 3 slices into each cut. Roll in a bowl with butter and olive oil. Place on a baking sheet and sprinkle generously with salt and pepper. Bake until crisp and tender, about 1 hour. Transfer to a serving platter and top with sour cream and herbs.
Sour cream with herbs:Combine all ingredients in a small bowl. Season with salt to taste and refrigerate until ready to use.
