Spicy grilled chicken breasts with salsa topcook.tomathouse.com
Ingredients:
- 1100 g skinless chicken breast fillet (4 chicken breasts)
- 1 tbsp. l. olive oil
- 1 small clove of garlic, finely grated
- 1.5 tsp ground ancho chili pepper
- 1.5 tsp ground cumin
- 1.5 tsp ground coriander
- 1 teaspoon paprika
- 1/4 - 1/2 teaspoon ground chipotle chili pepper
- 4 tsp freshly squeezed lime juice
- Lime wedges, for serving
- Coarse salt
- 2 tomatoes, cut into small cubes
- 3 pcs. vegetable physalis, peeled, washed and cut into small cubes
- 1/4 cup finely diced red onion
Preparation:
- Cut each chicken breast lengthwise, leaving a few centimeters from the end. Open it like a book.
- In a large bowl, combine olive oil, garlic, ancho chili, cumin, coriander, paprika, chipotle chili, 1 teaspoon lime juice, and 1 1/4 teaspoons salt. Add chicken breasts and toss to combine. Cover and refrigerate for 30 minutes to 2 hours.
- Meanwhile, prepare the salsa sauce: Combine the tomatoes, tomatillos, red onion, and remaining 3 teaspoons lime juice in a bowl, adding salt to taste. Cover and refrigerate until serving.
- Preheat the grill to medium. Grease the grill grate with vegetable oil. Place the chicken breasts on the grill and cook until grill marks appear, 4 to 6 minutes per side.
- Arrange chicken breasts on plates, top with salsa and serve with lime wedges.
