Spicy grilled chicken breasts with salsa

Ingredients:

  • 1100 g skinless chicken breast fillet (4 chicken breasts)
  • 1 tbsp. l. olive oil
  • 1 small clove of garlic, finely grated
  • 1.5 tsp ground ancho chili pepper
  • 1.5 tsp ground cumin
  • 1.5 tsp ground coriander
  • 1 teaspoon paprika
  • 1/4 - 1/2 teaspoon ground chipotle chili pepper
  • 4 tsp freshly squeezed lime juice
  • Lime wedges, for serving
  • Coarse salt
  • 2 tomatoes, cut into small cubes
  • 3 pcs. vegetable physalis, peeled, washed and cut into small cubes
  • 1/4 cup finely diced red onion

Preparation:

  1. Cut each chicken breast lengthwise, leaving a few centimeters from the end. Open it like a book.
  2. In a large bowl, combine olive oil, garlic, ancho chili, cumin, coriander, paprika, chipotle chili, 1 teaspoon lime juice, and 1 1/4 teaspoons salt. Add chicken breasts and toss to combine. Cover and refrigerate for 30 minutes to 2 hours.
  3. Meanwhile, prepare the salsa sauce: Combine the tomatoes, tomatillos, red onion, and remaining 3 teaspoons lime juice in a bowl, adding salt to taste. Cover and refrigerate until serving.
  4. Preheat the grill to medium. Grease the grill grate with vegetable oil. Place the chicken breasts on the grill and cook until grill marks appear, 4 to 6 minutes per side.
  5. Arrange chicken breasts on plates, top with salsa and serve with lime wedges.
