Ingredients:
- 3 cups orange cheese-flavored corn flakes
- 900 g of cream cheese at room temperature
- 3 cups grated cheddar
- 1/4 cup chopped chives
- 1 sweet pepper with a long stem
- Crackers for serving
Preparation:
- Place the corn flakes in a food processor and pulse until finely chopped. Transfer to a rimmed baking sheet.
- In a large bowl, combine the cream cheese, cheddar, onion, 1 teaspoon salt, and 1/4 teaspoon pepper. Form the mixture into a ball by pressing down on it. Use the tip of a table knife to score the sides down to form a pumpkin shape.
- Roll the cheese ball in crushed corn flakes. Use a knife to cut the entire stem off the pepper and place it on top of the cheese ball to resemble a pumpkin stem. Seed and slice the bell pepper. Serve the cheese ball on a plate with crackers and bell pepper pieces.
