Baked pears wrapped in bacon and stuffed with goat cheese topcook.tomathouse.com
Ingredients:
- 12 small pears
- 220 gr. goat cheese
- 1/4 cup mixed chopped herbs, such as parsley, thyme, and chives
- 2 tbsp olive oil + extra for drizzling
- 12 slices bacon, about 220g, halved
- 2 tablespoons of honey
- Arugula or dandelion leaves for serving
Preparation:
- Preheat oven to 190°C.
- In a small bowl, combine goat cheese, herbs, and 2 tablespoons olive oil; season with salt and pepper. Cut the pears in half and scrape out the seeds and cores.
- Place about 1 tablespoon of cheese in each pear half. Wrap the pear halves in bacon slices and place on a baking sheet. Drizzle with a little olive oil, season with salt and pepper. Bake the pears until soft and the bacon is crisp, about 25-30 minutes.
- Place the pears on a plate, drizzle with honey and garnish with arugula.
