Brown Betty Apple and Blackberry Casserole

Ingredients:

  • 110 g butter, melted + extra for greasing
  • 4 Golden Delicious apples, peeled, cored and cut into 2cm pieces.
  • 2 cups blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 0.5 tsp ground nutmeg
  • Finely grated zest and juice of half a lemon
  • 2 tbsp. flour
  • 1 cup crushed waffle cones (about 6 cones)
  • 0.5 cup brown sugar
  • 0.5 cup chopped almonds
  • 0.5 tsp salt
  • 0.5 tsp coarse salt

Preparation:

  1. Preheat oven to 175°C. Grease a 1.5-liter baking dish with butter.
  2. In a large bowl, combine the apples, blackberries, granulated sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, lemon zest and juice, flour, and 4 tablespoons melted butter. In another bowl, combine the waffle cones, brown sugar, the remaining 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg, almonds, salt, and the remaining 4 tablespoons melted butter.
  3. Spread half of the apple-berry mixture into the prepared baking dish. Sprinkle half of the waffle cone mixture on top. Spread the remaining apple-berry mixture over the top, then sprinkle with the remaining waffle mixture.
  4. Bake until the apples are soft and golden brown, 40-45 minutes. Transfer the pan to a wire rack and let rest for 10 minutes before serving. Top with ice cream or whipped cream, if desired.
