Pear compote

Preparation:

Combine 1/2 cup dry white wine, half a vanilla pod split lengthwise, 1 star anise, and a pinch each of salt and pepper, and bring to a boil. Cook until the wine has reduced by half, 4 minutes. Add 2 tablespoons sugar, 2 chopped, peeled pears, and 3 tablespoons water; cook for another 8 minutes. Add 1/4 teaspoon chopped thyme, increase the heat, and cook until syrupy, 1–4 minutes. Cool.
