Gorilla Ice Cream Sandwich

Ingredients:

    Banana and cheese ice cream

  • 4 frozen bananas, peeled and cut into 5cm pieces.
  • 0.5 tbsp. mascarpone cheese
  • 0.5 cup powdered sugar
  • 1 vanilla bean, cut in half and scrape out the seeds
  • Juice of half a Meyer lemon
  • Double Chocolate Cookies, recipe below

    Double chocolate cookies

  • 2 cups of flour
  • 0.5 cup cocoa powder
  • 1 teaspoon baking powder
  • 0.5 tsp of soda
  • 1/4 teaspoon salt
  • 220 g softened butter
  • 1 cup brown sugar
  • 0.5 cup white sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup dark chocolate chips
  • 1 cup pecans, coarsely chopped
  • Special equipment: 6 (7.5 cm) round molds

Preparation:

  1. Banana Cheese Ice Cream:


    Place banana slices in a bag and freeze overnight.
  2. Place the bananas, mascarpone, powdered sugar, vanilla seeds, and lemon juice in the bowl of a food processor. Press for a few seconds, then blend until smooth, about 20-30 seconds. Place the round molds on a baking sheet lined with parchment paper and evenly fill them with the cheese mixture. Freeze for at least 1 hour, until the ice cream is firm.
  3. Remove the ice cream from the molds and place it between two chocolate chip cookie halves.
  4. Double Chocolate Cookies:


    Position the oven rack in the middle and preheat to 175°C. Line 2 baking sheets with parchment paper. Sift the flour, cocoa, baking powder, baking soda, and salt into a large bowl.
  5. Using a mixer or food processor, beat the butter with both types of sugar until light and fluffy. Add the eggs and vanilla and mix. Pour the mixture into the bowl with the dry ingredients and stir.
  6. Then stir in the chocolate chips and nuts. Using an ice cream scoop, scoop the batter onto a parchment-lined baking sheet. Bake for 12–14 minutes, until the cookies are set but still soft. Transfer them to a wire rack to cool.
  7. Using 7.5 cm cookie cutters, cut the cookies evenly. Assemble the sandwiches and serve.
