New England-Style Steamed Clamstopcook.tomathouse.comPreparation:In a large saucepan, combine 2.5 cups of water, 1/4 onion, 1 bay leaf, 1 quartered celery stalk, and a few peppercorns and bring to a boil. Add 1.5 kg of brushed clams, cover, and simmer for about 10 minutes, until the shells open (discard any that don't open). Strain the liquid into a separate bowl.When eating, remove the clams from the shell, rinse them in the cooking liquid, and dip them in melted butter. Serve with lemon wedges. Ingredients: |
