Salad of marinated tomatoes with herbs topcook.tomathouse.com
Ingredients:
- 6 - 8 ripe tomatoes
- 4 green onions
- 1 cup olive oil
- 3-4 tbsp balsamic vinegar
- 2 tbsp. l. brown sugar
- A handful of fresh parsley leaves, lightly chopped
- 12 fresh basil leaves, thinly sliced
Preparation:
- Quarter the tomatoes, then cut each wedge in half and place in a bowl. Trim the green tops from the onions and thinly slice the white and light green parts. Add them to the tomatoes.
Pour olive oil, balsamic vinegar, brown sugar, and a little salt and pepper into a jar. Screw on the lid and shake well. Pour the dressing over the tomatoes and toss to combine.
- Add the herbs and toss gently. Cover the salad and refrigerate to marinate for a couple of hours, then serve.
