Brown Betty Apple Dessert topcook.tomathouse.com
Ingredients:
- 6 Granny Smith or Braeburn apples, peeled and cored
- Juice and zest of 2-3 lemons (depending on the acidity of the apples)
- 1.5 cups breadcrumbs
- 100 g cranberries
- 0.5 tsp salt
- 1 and 1/4 cups brown sugar
- 1 teaspoon ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground allspice
- 1/4 tsp ground cloves
- Special equipment: 5 crème brulee molds, shallow and oval
Preparation:
- Preheat oven to 175°C with a rack in the middle position.
- Place the apples on a flat surface, cut them in half, and then into slices. Place the apples and cranberries in a medium bowl and top with a layer of zest from 1 lemon and the juice from all the lemons.
- In a separate bowl, mix the butter and breadcrumbs. Season with salt.
In a third bowl, combine brown sugar, cinnamon, nutmeg, allspice, and cloves. Stir the mixture into the apples.
- Grease the baking pans with the remaining butter. Place the apples in the bottom and sprinkle with the breadcrumb-butter mixture. Cover each pan tightly with aluminum foil.
- Place on the middle rack of the oven and bake for 35-40 minutes. The apples should be soft and easily pierced with a knife. Then remove the foil and increase the oven temperature to 220°C (425°F). Bake until golden brown. Serve immediately.
