Grilled Peaches with Honey Orange Buttercream and Toasted Almonds topcook.tomathouse.com
Ingredients:
- 6 peaches or nectarines, halved and pitted
- 1 tbsp. Ricotta cheese
- 1/4 cup cold heavy cream
- 2 tablespoons clover honey
- 2 tsp grated orange zest
- 1/2 vanilla bean, seeds scraped out
- 1/4 cup toasted almonds
- Mint sprigs
Preparation:
- In a large bowl, whisk together the ricotta cheese, cream, honey, orange zest, and vanilla seeds until fluffy. Cover and refrigerate for 30 minutes.
- Preheat the grill to high heat. Brush the peaches with oil and grill for a few minutes on each side to cook through and soften.
- Spread the cream on a platter. Top with peaches and garnish with flaked almonds and mint sprigs. Use the baked fruit for pizzas.
