Grilled Peaches with Honey Orange Buttercream and Toasted Almonds

Ingredients:

  • 6 peaches or nectarines, halved and pitted
  • 1 tbsp. Ricotta cheese
  • 1/4 cup cold heavy cream
  • 2 tablespoons clover honey
  • 2 tsp grated orange zest
  • 1/2 vanilla bean, seeds scraped out
  • 1/4 cup toasted almonds
  • Mint sprigs

Preparation:

  1. In a large bowl, whisk together the ricotta cheese, cream, honey, orange zest, and vanilla seeds until fluffy. Cover and refrigerate for 30 minutes.
  2. Preheat the grill to high heat. Brush the peaches with oil and grill for a few minutes on each side to cook through and soften.
  3. Spread the cream on a platter. Top with peaches and garnish with flaked almonds and mint sprigs. Use the baked fruit for pizzas.
