- Line a baking sheet with parchment or waxed paper. Pat the cherries dry with paper towels.
- Melt the two types of chocolate separately using a stainless steel bowl set over simmering water in a saucepan. Stir until smooth.
- Holding the cherry by the stem, dip it into the melted glaze. If desired, coat one half with white chocolate and the other with dark chocolate. Place the chocolate-covered cherry on the prepared baking sheet. Repeat with the remaining cherries and melted chocolate.
- Refrigerate for approximately 40 minutes before serving.
