Caramel threads

Ingredients:

  • 2.5 cups granulated sugar
  • 1/2 cup corn syrup
  • 1/2 cup water

Preparation:

  1. Combine ingredients in a medium saucepan and wipe down the sides with a pastry brush dipped in water to prevent the sugar from caramelizing before it reaches the desired temperature.
  2. Heat the ingredients on the stovetop to 149°C (275°F), measuring the temperature with a thermometer. Remove from heat and cool to 135°C (275°F) over a double boiler.
  3. Dip a fork in the sugar syrup and, moving it as quickly as possible from side to side, pull the caramel threads out over the bottom of a greased bowl. Carefully gather the resulting decoration and place it on a dessert plate.
